Teppanyakistyle refers to a method of cooking on a flat iron griddle, known in Japanese as teppan, and to the dining experience commonly associated with that method. The technique centers on quick searing of ingredients on a hot surface and is often performed in front of diners by a trained chef, blending culinary technique with showmanship. The term teppanyaki derives from teppan (iron plate) and yaki (grilling or cooking).

Historically, teppanyaki originated in Japan and was popularized in the United States and other countries in the mid-20th century, notably through restaurants that feature a chef preparing meals on a communal teppan at a counter. The style has sometimes been conflated with hibachi, but hibachi refers to a different type of grill and heating method.

In teppanyakistyle cooking, a range of proteins and vegetables are prepared on the teppan using high heat to achieve rapid browning and flavor development. Common ingredients include beef, chicken, seafood, mushrooms, onions, and peppers, often accompanied by butter, garlic, and soy-based sauces.
