külmpressi
Külmpressi is a traditional Finnish method of preserving fish, particularly salmon and trout, using cold temperatures and salt. The technique dates back centuries and was originally developed as a way to store fish for long periods without refrigeration. The process involves packing fresh fish into wooden barrels or containers, layering them with salt and sometimes herbs or spices, and then sealing them tightly. The barrels are then submerged in cold water, such as a lake or river, where the surrounding temperature helps to slow down spoilage and bacterial growth, effectively preserving the fish for months or even years.
The name *külmpressi* comes from the Finnish words *kylmä*, meaning "cold," and *pressi*, meaning "press" or "compression."
Today, külmpressi remains a cultural practice and is still used by some traditional fishermen and food enthusiasts.
