Crispness depends on microstructure and moisture dynamics. Lower moisture and a rigid matrix favor crispness. Processing methods such as baking, frying, or dehydrating create air cells and starch structures that resist deformation and then break with a snap. Temperature and storage affect crispness: cooler, dry conditions usually enhance it, whereas humidity or moisture migration softens or dulls the crack.
