Crunchiness is a textural attribute of foods that is perceived when biting into something hard enough to fracture, producing an audible crunch. It is commonly associated with brittle or semi-brittle solids and often relates to low moisture content and a crisp external structure that breaks into fragments under chewing.

The physical basis involves fracture mechanics and food microstructure. Crunchy textures arise from rigid cell walls, air or fat inclusions, and a network that fractures rather than deforms. Water activity and moisture content strongly influence crunch; adding moisture tends to soften materials, reducing crunch. Processing methods that create a porous, dry structure—such as baking, frying, or drying—tend to enhance crunchiness, while high fat content or gelatinized starch can alter the fracture pattern.

Measurement of crunchiness combines sensory evaluation and instrumental texture analysis. Trained panels rate the intensity and duration of crunch, while instruments record peak force, fracture energy, and acoustic emissions during biting or biting-like tests. Correlations between perceived crunch and these objective metrics are used in product development and quality control.

Factors affecting crunchiness include composition (water activity, sugars, fats), microstructure (cell wall integrity, porosity), particle size and geometry, temperature, and storage conditions.
