In buffet service, guests serve themselves from a station; plated service provides seated, individually plated meals; family-style service brings platters to tables; live cooking stations involve chefs preparing items before guests. Some caterers specialize in specific cuisines, dietary needs, or types of events, and may operate as mobile or pop-up services.

Pricing and contracts vary. Common models include per-person pricing, tiered packages, or fixed-price menus with additional charges for staffing, equipment rental, travel, and setup. Contracts typically specify deposits, minimum guest counts, service times, and cancellation terms. Compliance and safety are important; caterers must follow local health regulations, obtain necessary permits or licenses (including alcohol service where applicable), and maintain insurance and food-safety plans such as HACCP or equivalent standards.
