Yleiskastike

Yleiskastike is a neutral, versatile sauce in Finnish cooking, often described as an all-purpose sauce. It serves as a general foundation or finishing touch for a wide range of dishes, including meat, fish, vegetables, and potatoes.

The typical preparation is based on a roux: butter is melted and flour is whisked in to form a pale paste, then milk or stock is gradually added while stirring until the sauce thickens to a light to medium consistency. This basic white sauce is usually seasoned with salt and white pepper, and often a pinch of ground nutmeg. For a richer version, cream may be used in place of or in addition to milk.

There are many variations. Some cooks use water or broth for a lighter sauce, while others enhance flavor with tomato, mushrooms, or fresh herbs. Enrichments such as cheese, mustard, or sour cream can transform it into a creamy cheese sauce or a mustard-kermakastike, depending on the dish being prepared.
