Vassoi

Vassoi (singular vassoio) are flat or slightly depressed trays used to carry, present, and serve food and beverages. In homes, restaurants, hotels, and catering operations they facilitate the transport of multiple dishes from kitchen to table and help organize courses at buffets or receptions.

They vary in shape and size, often rectangular or circular, with raised edges and handles on the sides. Common materials include stainless steel, aluminum, wood, plastic, ceramic, and composite laminates. Some designs prioritize durability and ease of cleaning; others emphasize aesthetics, with decorative finishes or natural wood grain.

Typical variants include the standard serving tray (vassoio da portata), buffet tray, and covered tray (vassoio coperto) used to keep dishes warm or protected. In professional contexts, trays may be used with chafing dishes, heat lamps, or riser stands to improve service flow. Domestic vassoi are also used for presenting antipasti, desserts, or tea service.

Maintenance depends on material: metal trays are often dishwasher-safe but may require polishing; wooden trays should be hand-cleaned and dried to prevent cracking; ceramic and porcelain trays are generally dishwasher-safe but can chip if mishandled. Proper storage and handling extend their life and preserve hygiene.
