Neilikka, known in English as clove, refers to the dried flower buds of the evergreen tree Syzygium aromaticum, a member of the Myrtaceae family. Native to the Maluku Islands of Indonesia, cloves have long been traded and valued for their aroma. The buds are harvested just before the flowering stage and dried, yielding small, dark brown, nail-shaped pieces that retain a potent fragrance.

Its flavor and aroma arise mainly from eugenol, giving a warm, sweet, and slightly biting character with notes reminiscent of cinnamon and pepper. The essential oil is used in foods, perfumes, and medicinal preparations, but high concentrations can be irritating and should be handled with care.

Clove is used sparingly due to its intensity. It appears in spice blends, baked goods such as fruit pies and gingerbread, mulled beverages, pickles, and marinades. It is common in Indian, Middle Eastern, Southeast Asian, and European cuisines. In Nordic and Finnish traditions, neilikka is associated with Christmas desserts and glögi.

Although native to Indonesia, cloves are now grown in Madagascar, Zanzibar, Sri Lanka, India, and parts of Southeast Asia. Global demand has fluctuated with crop conditions and price changes; sustainable farming and fair trade practices are increasingly emphasized.

Store whole cloves in an airtight container away from heat and light. Ground clove loses aroma quickly. Use neilikkaa modestly in recipes, and exercise caution with concentrated essential oil.
