Väkevöintiprosessit, commonly translated as fortification processes, refer to the methods used to increase the alcohol content of a beverage, typically wine, by adding distilled spirits. This practice is most famously associated with the production of fortified wines such as Port, Sherry, Madeira, and Marsala. The addition of spirits serves a dual purpose: it significantly raises the alcohol by volume (ABV) of the beverage and, importantly, halts the fermentation process. This halting of fermentation preserves some of the natural sweetness of the grapes by leaving residual sugars unfermented.

The type of distilled spirit used for fortification varies depending on the wine style and region. For example, grape brandy is the traditional spirit used in Port and Sherry production. The timing of the spirit addition is crucial to the final character of the fortified wine. If added early in fermentation, more residual sugar remains, resulting in a sweeter wine. If added later, after more fermentation has occurred, the resulting wine will be drier.

Fortification can also be applied to other beverages, though less commonly than wine. Certain liqueurs or spirits might undergo a secondary fortification to achieve a specific alcohol level or flavor profile. The term "väkevöinti" itself highlights the act of making something "väkevä" or potent, underscoring the primary goal of increasing alcohol strength. These processes are integral to creating distinctive and long-lasting alcoholic beverages with unique taste characteristics.
