Skynjanir

Skynjanir refers to a traditional Icelandic method of preserving fish, particularly cod, by drying it in the open air. This technique has been practiced for centuries and remains an important part of Icelandic culture and cuisine. The word "skynjanir" comes from the Icelandic verb *skynja*, meaning "to dry," and is closely associated with the historical practice of drying fish on wooden racks known as *skynjir*.

The process involves catching fresh fish, typically cod, and hanging them on wooden frames or racks in the wind and sun. The fish are often split open to allow for even drying and to remove internal organs. This method of preservation was essential for Icelanders, as it allowed them to store fish for extended periods without refrigeration. Skynjanir was particularly valuable during the long, dark winters when fresh food was scarce.

Skynjanir is not only a preservation technique but also a cultural practice.
