Senapsglasyr

Senapsglasyr is a glaze used in Nordic and Swedish cooking that centers on mustard (senap) as the defining flavor. The term combines senap with glasyr (glaze) and describes a glossy coating applied during roasting or baking to finish dishes with a sharp, sweet-sour note.

Preparation typically starts with mustard, often Dijon or whole-grain, blended with a sweetener such as sugar or honey and an acidic liquid such as vinegar or lemon juice. A small amount of stock or water is added to reach a pourable consistency. The mixture is heated gently to dissolve sugar and emulsify.

Application: The glaze is brushed onto meat during roasting or finished on the surface during the last minutes to form a caramelized coating. It is commonly used on pork, ham, poultry and certain fish, and may also be used to glaze vegetables for a glossy finish.

Variations differ by region and household. Common forms include honey-mustard glazes or those based on brown sugar; some recipes add beer, soy sauce, herbs, or spices for additional depth. Senapsglasyr can be prepared in advance and adjusted for sweetness or acidity to taste.

Storage and notes: Refrigerate leftovers for several days in a covered container. Reheat gently and re-emulsify if needed. In cooking, senapsglasyr provides a versatile finish that pairs with festive dishes such as Swedish Christmas ham as well as everyday roasted meats.
