Pepis

Pepis are a type of light and crisp flatbread originating from the Balkan region, particularly in countries such as Croatia, Bosnia and Herzegovina, and Serbia. The name "Pepi" or "Pepić" is often associated with these countries, where variations of the recipe exist.

Traditionally, Pepis are made from a simple dough of flour, water, and salt, without the use of yeast. The resulting bread is characterized by its delicacy, as it relies on the tenderness of the fresh dough rather than leavening agents. A short kneading process and a few minutes of rest allow the dough to relax, making it easier to shape into small, thin disks before baking.

Fireplaces and wood-fired ovens have historically played significant roles in Pepi production, as the smoke and heat impart unique flavors and aromas to the bread. In recent times, baking methods have become more standardized and, as a result, variations in texture and taste have diminished.
