Lenolaj

Lenolaj, commonly known as flaxseed oil, is a vegetable oil pressed from the seeds of Linum usitatissimum. In culinary use it serves as a source of omega-3 fatty acids; industrially it is a drying oil for paints, varnishes, and wood finishes. The oil is pale to golden and has a mild, nutty flavor when used in foods.

Nutritionally, lenolaj is rich in polyunsaturated fats, especially alpha-linolenic acid (ALA), an omega-3 fatty acid. It also contains linoleic and oleic acids. Because of its high unsaturation, lenolaj is prone to oxidation and rancidity; it should be stored in a cool, dark place, refrigerated after opening, and used relatively soon.

Uses: In cooking, it is best added to foods after heating, such as dressings, smoothies, or yogurt, and is not suitable for high-heat frying. In industry, flaxseed oil is a drying oil that forms a tough film when exposed to air, making it useful in varnishes, paints, and wood finishes; it is sometimes blended with other resins.

Safety and storage: Flaxseed oil may cause digestive upset in some people in large amounts and can interact with certain medications. Those with flax allergies should avoid it. Proper storage and using fresh oil help prevent rancidity.
