Triészterek are a class of organic compounds formed from the esterification of glycerol with three molecules of a carboxylic acid. Glycerol, a simple triol, has three hydroxyl (-OH) groups, each of which can react with a carboxylic acid group (-COOH) to form an ester linkage (-COO-). The resulting molecule is a triester of glycerol.

The properties of triészterek depend largely on the nature of the carboxylic acid groups attached. If the carboxylic acids are fatty acids, the resulting triészter is known as a triglyceride. Triglycerides are the main constituents of body fat in humans and animals, as well as vegetable fat. They serve as a significant source of stored energy.

Common examples of triészterek include fats and oils, which are mixtures of various triglycerides. The melting point of a triészter is influenced by the chain length and degree of unsaturation of the fatty acid residues. Shorter, unsaturated fatty acid chains generally lead to lower melting points, resulting in liquids (oils), while longer, saturated fatty acid chains lead to higher melting points, resulting in solids (fats).

Triészterek can be synthesized through various chemical reactions, most commonly by reacting glycerol with carboxylic acids or their derivatives, such as acyl chlorides or anhydrides, often in the presence of a catalyst. Hydrolysis, the reverse reaction, breaks down triészterek back into glycerol and their constituent carboxylic acids, a process that occurs during digestion and is also utilized in the industrial production of soaps and biofuels (biodiesel).
