A saltpanner is a worker who harvests salt produced by evaporating seawater or brine in shallow artificial ponds called salt pans or salt flats. The practice, often referred to as solar salt production, relies on warm, dry climates and abundant sunshine. Seawater or hypersaline groundwater is pumped into a series of progressively shallower ponds. Solar heat and wind drive evaporation, concentrating brine to near-saturation. When crystals form in the crystallizer stage, saltpanners use long-handled forks or rakes to harvest the salt, which is then washed, dried, and bagged for transport. In large operations, mechanical harvesters and automated washing may supplement manual methods, but in many regions saltpanner work remains artisanal.
