Pieczarek, in Polish cuisine, refers to the common edible mushroom Agaricus bisporus. It is one of the most widely cultivated and consumed mushrooms in the world. In markets, the term covers varieties such as the white button mushroom (pieczarka biała) and the brown varieties (pieczarka brązowa), which differ mainly in color and maturity.

Taxonomy and description: Agaricus bisporus is a small to medium-sized mushroom with a smooth cap and a whitish to brown surface. The cap is typically 4–8 cm in diameter, and its gills transition from pinkish to brown as the fruiting body matures. The stem is erect and may bear a partial veil in young specimens.

Cultivation and production: Pieczarki are grown commercially on composted substrate in controlled environments, with attention to temperature, humidity, and light. They are harvested at various stages, from immature white button mushrooms to more mature cremini or portobello forms. Poland is among the major producers, and pieczarki are common in Central and Northern European markets.

Nutritional value and storage: Pieczarek are low in calories and contain protein, dietary fiber, and vitamins from the B group, as well as minerals such as potassium and phosphorus. Vitamin D content can vary and may increase when mushrooms are exposed to ultraviolet light. They should be stored refrigerated, preferably in a breathable container, and rinsed or brushed to remove dirt before use.

Culinary uses and safety: Pieczarki are versatile in cooking, used in soups, sauces, sautés, stews, pizzas, and salads.
