osmottinen
Osmottinen, or osmotin, is a plant protein belonging to the thaumatin-like protein family (PR-5). It was first characterized in tobacco and is now known from many flowering plants. Osmotin-like proteins are typically secreted to the extracellular space (the apoplast) or associated with the cell wall and are rapidly induced by osmotic stress and various environmental cues. The mature protein is about 23–28 kilodaltons and is translated with an N-terminal signal peptide that directs secretion. Structurally, osmottinins share the thaumatin-like fold, a characteristic of this protein family, and are related to the sweet-tasting protein thaumatin, although osmotin itself is not sweet.
