Omättad is a Swedish adjective meaning not saturated. It is used to describe systems that have not reached maximum capacity, such as a solution that can still dissolve more solute or a chemical compound with fewer than the maximum number of hydrogen atoms.

In chemistry, an omättad förening is a compound that contains one or more double or triple bonds between carbon atoms. These bonds reduce the number of hydrogen atoms bonded to the carbon skeleton and make the molecule more reactive, particularly in addition reactions. Common examples are alkenes (with at least one carbon–carbon double bond) and alkynes (with a carbon–carbon triple bond). The term is contrasted with mättad.

In nutrition and food science, omättade fetter are fats in which at least one fatty acid contains one or more double bonds. They are usually liquid at room temperature and are often considered healthier than saturated fats. They are subdivided into enkelomättade fetter and fleromättade fetter, including essential fatty acids such as omega-3 and omega-6. Food sources include olive oil, nuts, seeds, and fatty fish.

In solution chemistry, omättad lösning denotes a solution that can still dissolve more solute at a given temperature; once no more solute can be dissolved, the solution is saturated. The term is widely used in Swedish scientific contexts across chemistry, biochemistry, and nutrition.
