Huchen, scientifically known as Hucho hucho and commonly called the Danube salmon, is a large freshwater fish in the salmon family (Salmonidae). It is native to Europe, with a strong association to the Danube river basin, where it reaches some of its highest populations. Historically, it also occurred in other large European rivers, but its range has diminished due to habitat loss and other human impacts.

The species inhabits cool, well-oxygenated rivers and large streams, preferring deeper pools, runs, and gravel substrates for spawning. It is a carnivorous predator, feeding on smaller fish and various invertebrates. Huchen is a relatively late-maturing and long-lived fish; adults can reach about one meter in length, with exceptional individuals exceeding 1.5 meters and weighing several tens of kilograms.

Spawning takes place in spring in gravel beds along rivers. Females lay eggs in gravel nests (redds), which hatch after several weeks depending on water temperature; the young remain in sheltered habitats before moving to open waters.

Huchen has experienced substantial declines due to overfishing, habitat degradation, pollution, and barriers such as dams. It is listed as Endangered on the IUCN Red List and enjoys protection under national laws and regional conservation measures. Conservation approaches include habitat restoration, improving river connectivity, fishing restrictions, and hatchery-based restocking programs, though natural reproduction remains limited in many areas.

In addition to its ecological role, huchen is valued in sport fishing for its size and fighting ability, subject to regulations designed to protect wild populations. The Danube salmon remains an emblem of European freshwater biodiversity and river health.
