Fino is a style of dry sherry produced in the Jerez region of Andalusia, Spain. It is made primarily from the Palomino grape and is renowned for its pale color, light body, and crisp, dry profile. Fino sherries are aged under a layer of yeast called flor, which forms on the wine as it matures and protects it from oxidation. This flor-driven aging, typically carried out in the criaderas y soleras system, gives Fino its delicate character and often yields an aromatic, bread- and yeast-forward impression. Finos are usually aged for about 2 to 4 years before bottling.
