The effect is mainly caused by capsaicinoids, especially capsaicin, which activate the TRPV1 receptors in sensory neurons. Spiciness is subjective and influenced by individual factors such as genetics, appetite, temperature, and the food’s fat and acidity.

Heat is traditionally measured on the Scoville scale, which ranks peppers by how many times their heat must be diluted to be imperceptible. Modern methods use high-performance liquid chromatography (HPLC) to quantify capsaicin and related compounds, providing a more precise heat value. Chili peppers vary widely in pepper heat, from mild to extremely hot, with species such as Capsicum chinense and Capsicum annuum often displaying high levels of capsaicinoids.

In cooking, tulisuus is used to enhance flavor, aroma, and perception of body in dishes. It can be adjusted by selecting pepper varieties, removing seeds and membranes, or balancing heat with fats, acids, and dairy. Handling hot peppers requires care, as capsaicin can irritate skin and eyes; gloves are commonly recommended when chopping.

Health and safety considerations include research on capsaicin’s potential metabolic and analgesic effects, though findings are mixed. High intake may cause gastrointestinal discomfort in some individuals, and extremely spicy foods can be unsuitable for people with certain medical conditions. Moderation and personal tolerance typically guide its use.

Linguistically, tulisuus denotes the sensory attribute of heat in food, and tulisuudesta expresses this concept in Finnish grammar. It is a common descriptor in Finnish cuisine discussions and product labeling.
