Common traditional preservation techniques include drying, salting, fermenting, and smoking. Drying removes moisture, inhibiting microbial activity, while salting draws out water from food, creating an environment hostile to bacteria. Fermentation relies on beneficial microbes to break down sugars and produce acids or alcohol, preserving food while enhancing flavor. Smoking exposes food to wood smoke, which contains antimicrobial compounds and adds flavor.

Modern preservation methods incorporate advanced technologies such as canning, pasteurization, refrigeration, and freeze-drying. Canning involves sealing food in airtight containers and heating it to kill microorganisms, while pasteurization uses heat to reduce pathogens without significantly altering the food’s texture. Refrigeration and freezing slow down microbial and enzymatic activity by lowering temperatures, extending shelf life. Freeze-drying removes water through sublimation, preserving food for long-term storage without refrigeration.
