Kolduny

Kolduny is a lesser-known but culturally significant dish originating from the region of Tatarstan in Russia, with roots tracing back to Tatar and Bashkir culinary traditions. The name "kolduny" is derived from the Tatar word "qoldun," meaning "dumpling," reflecting its primary form—a type of filled, boiled bread or pasta. The dish is often prepared during festive occasions, particularly during the Muslim holiday of Ramadan or the Tatar New Year celebrations.

Traditionally, kolduny are made from wheat flour dough, which is rolled out thinly and cut into small squares or rectangles. The filling typically consists of minced meat—commonly lamb or beef—mixed with onions, spices like cumin and black pepper, and sometimes dried fruits or nuts for added sweetness. The dough is then wrapped around the filling, sealed, and boiled until tender. Variations may include sweet fillings, such as pumpkin or dried apricots, though savory versions remain the most prevalent.

Kolduny are often served as a main dish, accompanied by sour cream, fresh herbs, or a light tomato-based sauce. They are also commonly paired with other Tatar dishes, such as pilaf or beshbarmak, to create a balanced meal.
