Härskiintyvät

Härskiintyvät is a Finnish term that describes the process of something becoming rancid or spoiled, particularly fats and oils. It refers to the chemical breakdown of lipids, which leads to the development of unpleasant odors and flavors. This deterioration is often caused by oxidation, hydrolysis, or enzymatic activity, and it can be accelerated by exposure to heat, light, and air.

When fats and oils härskiintyvät, they undergo changes in their molecular structure. Triglycerides, the main components of fats and oils, can be broken down into free fatty acids and glycerol. These free fatty acids can then react further, leading to the formation of aldehydes, ketones, and other compounds that are responsible for the characteristic off-flavors and smells associated with rancidity.
