Fleischleistung, literally "meat performance," is a term encountered in German-language discussions of livestock production and meat science. It is not a strictly defined technical term in mainstream literature, and its precise meaning can vary by context. Broadly, it denotes the overall performance of muscle tissue as a product, encompassing attributes from live-animal growth to the quality and value of the meat after slaughter.

Common components associated with Fleischleistung include growth rate and feed efficiency, dressing percentage (carcass yield relative to live weight), muscle fiber composition, marbling (intramuscular fat), tenderness, juiciness, flavor, color, water-holding capacity, and shelf life. In practice, researchers and industry practitioners may combine these factors to gauge the economic value and consumer acceptability of meat.

Measurement is typically multi-faceted: production data such as growth rate and feed conversion, carcass metrics like dressing percentage, and meat quality tests such as shear force for tenderness and pH and color measurements, complemented by sensory evaluation.
