Datemaki, also known as dashimaki tamago or kinshi tamago, is a rolled omelet originating from Japan. It is characterized by its slightly sweet flavor and often a vibrant yellow color, achieved through the addition of sugar and sometimes mirin or dashi. The cooking process involves gradually pouring thin layers of beaten egg onto a rectangular frying pan, rolling each layer as it cooks, and continuing this process until a log-like omelet is formed.
