Anthocyanins accumulate in plant vacuoles and are influenced by pH, light, and enzymatic activity, which affects their stability and hue.

Anthocyanin-containing materials occur widely in fruits, vegetables, and flowers. High concentrations are found in berries (such as blueberries, blackberries, and raspberries), grapes, cherries, red cabbage, and purple corn. In the food industry, anthocyanins are used as natural colorants (often labeled as E163 in some jurisdictions) and can be extracted with water or alcohol-based solvents for incorporation into beverages, confections, and dietary supplements. The color and stability of anthocyanins in products depend on formulation, processing, and storage conditions.

Health and nutrition aspects are commonly associated with anthocyanin-containing products. Anthocyanins exhibit antioxidant activity in vitro and in vivo and have been studied for potential anti-inflammatory, cardiovascular, and anticancer effects. However, clinical evidence remains mixed, and bioavailability is limited by metabolism and the influence of food matrices and gut microbiota. As a result, dietary recommendations generally emphasize whole, anthocyanin-rich foods rather than isolated supplements.

Stability is a key consideration for anthocyanin-containing materials. Anthocyanins are sensitive to heat, light, oxygen, and pH changes, which can degrade color and bioactivity. Strategies such as encapsulation, co-pigmentation, and careful pH control are used to improve stability in finished products.
