Alitas

Alitas is the plural form of alita, a diminutive of ala (wing) in Spanish. The term literally means "little wings" and is used to refer to small wings of birds or other animals. In culinary contexts, alitas de pollo refers specifically to chicken wings and is a common term in Spanish-speaking countries.

Chicken wings are typically prepared by frying, baking, or grilling, and are often separated into the drumette and the flat. They are commonly seasoned or tossed in sauces or rubs, with varieties ranging from spicy and hot to barbecue and garlic-herb. In many places they are served as snacks or appetizers, often with dipping sauces such as ranch or blue cheese in North America, or chutneys and salsas elsewhere.

Regional styles vary; in Spain and Latin America there are many house preparations, including alitas adobadas (chilies or citrus marinades) and alitas al ajillo (garlic). The term is widely used in restaurants and bars to describe prepared wings.

Buffalo wings, a dish associated with the United States, originated in Buffalo, New York, in the mid-20th century and helped popularize chicken wings globally. Nutritionally, wings provide protein but can be high in fat, especially when fried or served with rich sauces; serving size and cooking method influence calories.
