Zoutstress refers to the physiological and psychological impact of excessive salt intake on an organism. While sodium is an essential nutrient for various bodily functions, including nerve signal transmission and fluid balance, prolonged or excessive consumption can lead to detrimental health effects. In plants, zoutstress, or salt stress, occurs when the salt concentration in the soil solution exceeds the plant's tolerance level. This can impede water uptake due to osmotic imbalance and also lead to ion toxicity, where specific ions like sodium and chloride accumulate to harmful levels within plant tissues. Symptoms in plants can include stunted growth, wilting, leaf necrosis, and reduced crop yields.
In animals and humans, zoutstress is primarily associated with high dietary salt intake. Chronically elevated sodium
