Ziemniaki, known in English as potatoes, are tubers derived from the plant Solanum tuberosum, a member of the nightshade family. They are grown for edible, starchy tubers that function as a staple food in many cuisines and are used in a wide range of dishes.

Originating in the Andean highlands of Peru and northwest Bolivia, potatoes were domesticated thousands of years ago. They spread to Europe in the 16th century and later worldwide, becoming a vital crop due to their high yield, relatively short growing season, and culinary versatility.

Botany and cultivation: Potatoes are grown as annual crops. The plant produces underground tubers that store energy. They are propagated from seed potatoes or cut tubers. They prefer cool, moist climates and well-drained, loamy soil with a pH around 5.5 to 6.5. They require regular moisture and are sensitive to frost. Common threats include late blight and the Colorado potato beetle.

Varieties and culinary uses: There are many cultivars, broadly categorized by maturity (early, mid, late) and starch content (high-starch, low-starch, waxy). They can be boiled, baked, fried, mashed, or roasted, and are used in a range of dishes globally. In Poland, ziemniaki are a staple and feature in dishes such as placki ziemniaczane or kluski. Nutritionally, a medium potato provides about 110 calories, with carbohydrates, little fat, and notable amounts of vitamin C and potassium.

Storage and safety: Store in a cool, dark, well-ventilated place; keep away from light to prevent greening and solanine formation. After harvest, keep them dry and away from onions or fruit that emit ethylene.
