zaru

A zaru is a traditional Japanese serving and draining basket made from woven bamboo. It is a shallow, round or rectangular sieve-like tray used to rinse, drain, and air-dry foods, particularly noodles such as soba, udon, and somen, as well as vegetables or tofu. The open weave allows water to drain away while the food rests above the surface, helping to keep sogginess at bay.

Construction and form vary, but a typical zaru is a lightweight, flat basket with a lattice or slatted bottom and a narrow rim. It is commonly made from bamboo slats bound together with cords or splints, though modern versions may use wood or plastic as substitutes. Zaru come in different sizes to accommodate different quantities of ingredients and may be used on a plate or placed over a small stand to elevate the contents.

In cuisine, zaru is most closely associated with zaru soba, a popular presentation of cold buckwew noodles served on a zaru with a dipping sauce (tsuyu) and condiments such as sliced scallions, wasabi, and nori. The zaru serves both a practical draining function and an appetizing presentation, signaling a chilled, refreshing dish typically eaten in warm weather. The term zaru can also refer more generally to the vessel used for draining or serving foods on a similar rack or mat.

Historically, zaru reflect traditional Japanese kitchenware emphasizing simplicity and natural materials. While bamboo remains common, modern kitchens sometimes substitute other materials, though the term and its association with draining and presenting noodles persist.
