Potato growing, also known as potato cultivation, is the process of producing potatoes from seed potatoes. Potatoes are a starchy tuber vegetable belonging to the nightshade family, Solanum tuberosum. They are a staple food crop worldwide, valued for their versatility and nutritional content.

Successful potato cultivation begins with selecting the right seed potatoes. These are typically small, whole potatoes or pieces of larger potatoes that have developed "eyes," which are buds capable of sprouting. The soil should be well-draining and rich in organic matter, with a slightly acidic pH. Potatoes are usually planted in the spring after the last frost. Seed potatoes are placed about 4-6 inches deep and 12-18 inches apart in rows.

As the potato plants grow, hilling is an important practice. This involves mounding soil around the base of the developing plants. Hilling protects the developing tubers from sunlight, which can cause them to turn green and produce toxic solanine, and also encourages the formation of more tubers along the buried stem.

Potatoes require consistent moisture, especially during the tuber formation stage. Adequate watering is crucial, but overwatering can lead to rot. Common pests include the Colorado potato beetle and potato leafhopper, while diseases like late blight and early blight can affect the plants. Crop rotation is recommended to prevent soil-borne diseases and pest buildup.

Harvesting typically occurs when the foliage begins to yellow and die back. The exact time varies depending on the variety, with early, mid, and late-season varieties existing. For "new" potatoes, harvesting can happen earlier while the skin is still thin. Mature potatoes are dug up carefully to avoid bruising, and then cured in a dry, well-ventilated area to toughen their skins before storage. Proper storage conditions, such as cool, dark, and humid environments, help preserve the harvested potatoes for extended periods.
