Olivecultivated refers to the cultivation of the olive tree, Olea europaea, for fruit and oil. The cultivated olive is a perennial evergreen tree native to the Mediterranean region and prized for its fruit and the oil pressed from it. Cultivation practices vary by climate and region but share core requirements: warm, dry summers; mild, wet winters; and well-drained soils. The tree is long-lived and can produce for many decades.

Olive trees are typically grown in orchards with controlled spacing, trained and pruned to shape the canopy, and managed through pruning, fertilization, and, in many areas, irrigation. Young trees are trained for a strong rootstock and scaffold, while mature trees are pruned to optimize light penetration and fruiting wood. Pollination is often by wind, and many cultivars are self-fertile. Harvest timing influences flavor and oil quality: green olives are picked early and tend to have a different balance of bitter compounds than fully ripe fruits.

The two main products from cultivated olives are olive oil and table olives. Olive oil is classified by quality and processing method, with extra virgin and virgin olive oils derived from mechanical pressing of fresh fruit. Table olives undergo curing processes to remove bitterness before consumption. Widely grown olive cultivars include Arbequina, Picual, Koroneiki, Frantoio, and Kalamata, each with distinct oil yields and flavor profiles.

Economically, major producers include Spain, Italy, and Greece, followed by Turkey and other Mediterranean and subtropical regions. Environmental considerations in olive cultivation emphasize water management, soil health, pest and disease control (such as olive fruit fly and bacterial diseases), and sustainable farming practices to reduce inputs and protect biodiversity.
