Klepon, also known as onde-onde in some regions, is a traditional Indonesian sweet rice cake. It is typically made from glutinous rice flour, which gives it a chewy texture. The dough is formed into small, round balls and filled with liquid palm sugar (gula merah). When bitten into, the warm, molten sugar bursts out. The exterior of the klepon is then coated in grated fresh coconut, providing a contrasting texture and savory element. The green color of the klepon is traditionally achieved by using pandan leaf extract, although artificial coloring may also be used.
