Juuripersilja, known in English as parsley root, is a root vegetable derived from the herb Petroselinum crispum. It is the edible taproot of the plant, which is grown for both its root and its aromatic leaves. The roots are typically white to pale yellow and can be cylindrical or tapered in shape. Juuripersilja is commonly associated with European cuisines and is used for its mild, celery-like flavor complemented by parsley’s bright notes.
