Unsaturated fatty acids contain one or more double bonds between carbon atoms in their hydrocarbon chains. If there is one double bond, it is called a monounsaturated fatty acid, such as oleic acid found in olive oil. If there are multiple double bonds, it is a polyunsaturated fatty acid, like linoleic acid (omega-6) and alpha-linolenic acid (omega-3), found in vegetable oils and fish. Unsaturated fatty acids are generally liquid at room temperature. The position of the double bonds influences their properties, with cis configurations being more common in nature and leading to kinks in the chain, while trans configurations are less common naturally and can be formed during industrial processing, negatively impacting health.

Fatty acids can be synthesized by organisms or obtained from the diet. They are important for human health, with essential fatty acids being those that cannot be synthesized by the body and must be consumed.
