enbär

Enbär, or juniper berry, is the berry-like fruit of the evergreen conifer genus Juniperus, most commonly Juniperus communis. The edible fruit develops on the female cones and matures into a fleshy drupe about 4–12 mm in diameter, typically blue-black with a waxy bloom. Although called berries, these are cone-derived fruits. Juniperus communis is native to Europe, Asia, and parts of North Africa and grows in forests, moorlands, and rocky areas.

The flavor of enbär is resinous and piney with citrusy undertones. In cooking, the berries are usually dried and crushed before use and can flavor meats, game, sauces, sausages, pickles, and sauerkraut. In beverages, juniper berries are essential to gin, giving the spirit its characteristic aroma; the term gin itself is linked to the Dutch jenever, referencing juniper. They also appear in liqueurs and some bitters.

Harvesting and storage: Enbär is typically dried for culinary use. Store dried berries in airtight containers away from light and heat; when dried and properly stored, they retain flavor for months to years.

Safety and considerations: Juniper berries are generally used in small quantities. Large quantities can cause digestive upset and may irritate the kidneys; they are not recommended for routine use during pregnancy or for people with certain kidney conditions. While many juniper species exist, culinary use should rely on known edible sources, such as Juniperus communis, to avoid non-edible berries.
