Triglyseroliestereitä, commonly known as triglycerides, are the main form of fat found in the body and in food. They are composed of a glycerol molecule esterified to three fatty acid molecules. Glycerol is a simple alcohol, and fatty acids are long chains of carbon atoms with a carboxyl group at one end. The type of fatty acids attached to the glycerol backbone determines the properties of the triglyceride. These fatty acids can be saturated, meaning they contain no double bonds between carbon atoms, or unsaturated, meaning they contain one or more double bonds.

Triglycerides serve as a crucial energy source for the body. When the body needs energy, triglycerides are broken down into glycerol and fatty acids, which can then be used by cells for fuel. They also play a role in insulation, protecting organs and maintaining body temperature. Furthermore, triglycerides are involved in the absorption of fat-soluble vitamins (A, D, E, and K). Excess dietary energy is converted into triglycerides and stored in adipose tissue.

In food, triglycerides are found in various forms, including vegetable oils, animal fats, and butter. The physical state of triglycerides at room temperature depends on the saturation of their fatty acid chains. Triglycerides rich in saturated fatty acids are typically solid at room temperature, while those rich in unsaturated fatty acids are liquid. Understanding triglycerides is important in nutrition and health, as high levels of certain types of triglycerides in the blood can be associated with an increased risk of cardiovascular disease.
