Syrakulturer, often translated as "curd cultures" or "starter cultures," refers to the live microorganisms, primarily bacteria, used to initiate or accelerate the fermentation process in dairy products. These cultures are essential for the production of a wide variety of fermented dairy foods such as yogurt, cheese, kefir, and buttermilk. The specific types of bacteria present in a syrakultur determine the final characteristics of the product, including its flavor, texture, aroma, and shelf life.

The process typically involves introducing a specific blend of lactic acid bacteria (LAB) to milk. These bacteria consume lactose, the primary sugar in milk, and convert it into lactic acid. The increase in lactic acid causes the milk proteins, particularly casein, to denature and coagulate, leading to the thickening and acidification characteristic of fermented dairy. Different syrakulturer contain distinct combinations of bacterial species and strains. For instance, mesophilic cultures, active at moderate temperatures, are commonly used for cheese and cultured butter, while thermophilic cultures, thriving at higher temperatures, are preferred for yogurt and some cheeses.
