Suitsukalvot, often translated as "casing membranes" or "sausage skins," are essential components in the production of various sausages and cured meats. These flexible, semi-permeable layers act as a protective outer layer for the processed meat filling, contributing to its structure, appearance, and preservation. They are available in a range of materials, each with distinct properties affecting texture, edibility, and application.

Natural casings, derived from the intestines of animals like pigs, sheep, and cattle, are a traditional and popular choice. They offer a natural bite and are typically edible. Their preparation involves thorough cleaning and salting to ensure hygiene and preservation. The type of animal used influences the size and thickness of the casing, making them suitable for different sausage varieties, from delicate breakfast links to robust salami.

Artificial casings, on the other hand, are manufactured from various materials such as cellulose, collagen, and plastic. Cellulose casings, often used for products like frankfurters and wieners, are removed before consumption. Collagen casings, derived from animal collagen, can be edible and are used for a wide range of sausages, offering consistent size and strength. Plastic casings are non-edible and primarily used for vacuum-packed or shelf-stable products, providing excellent barrier properties against moisture and oxygen.
