Statsimos

Statsimos refers to a traditional Greek dessert that is a type of sweet rice pudding, often associated with the Greek Orthodox Easter celebration. The dish is prepared by cooking rice in milk, sugar, and sometimes cinnamon or other spices, until it becomes creamy and thick. It is typically served cold, often garnished with nuts, raisins, or a drizzle of honey.

The name "statsimos" comes from the Greek word *stafylos*, meaning "grape," as the dessert sometimes includes raisins or grapes as an ingredient. While it shares similarities with other European rice puddings, such as Spanish *arroz con leche* or Italian *risotto dolce*, statsimos has distinct regional variations and cultural significance in Greece. In some areas, it is also called *oryktiro* or *oryza tou Christou* ("Christ’s rice").

Statsimos holds symbolic importance during Easter, representing the resurrection and abundance. It is often prepared in large quantities for communal gatherings and is believed to bring good luck. Variations of the dessert may include the addition of vanilla, lemon zest, or even a touch of orange blossom water for added flavor.
