Oxidationprodukter

Oxidationprodukter are substances formed when another compound undergoes oxidation. Broadly, oxidationprodukter arise when a chemical species loses electrons or gains oxygen, or when reactive oxidants chemically transform it. The term is used across disciplines such as chemistry, biology, environmental science, food science, and materials science.

In organic chemistry, common oxidationprodukter include aldehydes and ketones derived from alcohols, carboxylic acids formed by further oxidation, and reactive intermediates such as hydroperoxides and epoxides. In materials science, oxidationprodukter often manifest as oxide layers on metals and ceramics, for example iron oxide (rust) or aluminum oxide that influence corrosion and surface properties.

In biological contexts, reactive oxygen species can initiate lipid and protein oxidation, producing lipid peroxides and secondary aldehydes (such as malondialdehyde) that serve as indicators of oxidative stress. In foods, oxidationprodukter contribute to flavors and aromas (often as aldehydes and ketones) and can also cause nutrient loss or quality changes; antioxidants are commonly used to limit these reactions. In the atmosphere, oxidation of volatile organic compounds forms secondary organic aerosols and other oxidized products that affect air quality and climate.

Detection and assessment of oxidationprodukter rely on analytical methods such as gas chromatography–mass spectrometry (GC-MS), liquid chromatography–mass spectrometry (LC-MS), infrared spectroscopy, and nuclear magnetic resonance. Controlling their formation involves strategies to limit exposure to oxidants (oxygen, light, heat), use of antioxidants, or application of protective atmospheres during storage and processing.
