Olajgyártásra refers to the process of producing edible oils. This involves extracting oil from various plant-based sources such as seeds, nuts, and fruits. The specific methods employed depend on the raw material and the desired type of oil.

Commonly, seeds like sunflower, soybean, and rapeseed are used. The initial step usually involves cleaning and dehulling the seeds to remove impurities and husks. Subsequently, the seeds are often crushed or flaked to increase the surface area, facilitating oil extraction. Mechanical pressing, also known as cold pressing or expeller pressing, is a primary method where oil is squeezed out of the seeds using high-pressure machinery. This method often preserves more of the oil's natural flavor and nutrients.

Alternatively, solvent extraction is a widely used technique, particularly for seeds with lower oil content. In this process, a food-grade solvent, typically hexane, is used to dissolve the oil from the seed material. The solvent-oil mixture is then heated to evaporate the solvent, leaving the crude oil behind. The solvent is usually recovered and reused.

After extraction, the crude oil undergoes a refining process to remove impurities, undesirable flavors, odors, and colors. This typically involves degumming, neutralizing, bleaching, and deodorizing steps. Some oils, like extra virgin olive oil, are produced with minimal processing to retain their characteristic taste and nutritional properties, often relying solely on mechanical extraction. The final product is then filtered and packaged for consumption.
