Manzanilla-Sanlúcar is a type of sherry wine produced exclusively in the town of Sanlúcar de Barrameda in the province of Cádiz, Andalusia, Spain. It is one of the three main types of sherry, alongside Fino and Amontillado. Manzanilla is distinguished by its unique aging process, which takes place entirely in Sanlúcar's coastal bodegas. The proximity to the Guadalquivir River and the Atlantic Ocean creates a distinct microclimate characterized by high humidity and cooler temperatures compared to other sherry-producing regions.

This specific environment fosters the development of a thicker layer of flor, the film of yeast that protects the wine from oxidation during its aging. The flor in Manzanilla is said to be more active and robust, imparting a lighter, crisper, and subtly briny character to the wine. Manzanilla is typically very pale yellow in color, with aromas of almonds and sea salt. On the palate, it is dry, light-bodied, and refreshing, often described as having a "saline" or "oceanic" quality.

Like other Finos, Manzanilla is best served chilled and is traditionally paired with seafood, tapas, and light appetizers. It is a popular accompaniment to the local specialties of Sanlúcar de Barrameda, such as langostinos (prawns). The wine is not meant for long-term aging and is best consumed relatively young to appreciate its fresh characteristics.
