Larfa is a traditional Moroccan dish that originates from the northern regions of the country, particularly the Rif Mountains. The name "larfa" is derived from the Arabic word "al-rif," referring to the Rif region. This dish is a type of stuffed vegetable, typically made with zucchini or eggplant, though other vegetables like bell peppers or tomatoes may also be used. The filling usually consists of a mixture of minced meat—often lamb or beef—combined with spices such as cumin, coriander, paprika, and garlic, along with onions and sometimes raisins or pine nuts for added sweetness and texture.
