Küpsemisele is a traditional culinary practice observed in some regions, particularly associated with rural communities. The term itself is derived from the Turkish word "küp," meaning earthenware pot or jar, and "semiz," meaning plump or fat. Historically, küpsemisele involved the preservation of meat, typically lamb or mutton, by encasing it in a large earthenware pot.

The process would begin with the preparation of the meat, which would be seasoned with various spices and herbs. It was then placed inside a specially designed earthenware pot, often with a tight-fitting lid. To ensure long-term preservation and to impart a distinct flavor, the meat was often covered with its own fat or rendered animal fat. The pot would then be sealed, sometimes with a clay or dough mixture, to create an airtight environment.

These sealed pots were typically stored in cool, dark places such as cellars or underground. The absence of air and the consistent cool temperature prevented spoilage and allowed the meat to mature, developing a rich, concentrated flavor over time. Küpsemisele was a vital method of food preservation, especially during times when refrigeration was not available, ensuring a supply of meat throughout the year. The meat, once unearthed, would be cooked slowly, often by boiling or stewing, and was considered a delicacy.
