Kylmäpuristusta

Kylmäpuristus, or cold pressing, is a method of extracting oils from seeds, nuts, and fruits without the use of high temperatures. This technique aims to preserve the natural nutrients, flavors, and aromas of the raw material. Unlike conventional methods that often involve heat to increase oil yield, cold pressing relies on mechanical pressure alone.

The process typically involves crushing the raw material in a screw press or hydraulic press. The pressure generated ruptures the cell walls, releasing the oil. The temperature during this process is kept below a certain threshold, commonly around 49 degrees Celsius (120 degrees Fahrenheit), though specific limits can vary. This low-temperature approach is crucial for preventing the degradation of beneficial compounds such as vitamins, enzymes, and antioxidants.

Cold-pressed oils are often considered superior in quality due to their enhanced nutritional profile and distinct taste. They retain more of the natural flavor of the source ingredient, making them desirable for culinary applications, particularly in dressings, marinades, and finishing dishes. Examples of commonly cold-pressed oils include olive oil, flaxseed oil, sunflower oil, and walnut oil.

The method is also used for extracting juices from fruits and vegetables, commonly referred to as cold-pressed juice. This process also aims to maintain the integrity of vitamins and enzymes present in the raw produce. The resulting products are generally perceived as more wholesome and nutrient-dense compared to those produced using heat-based extraction methods.
