Herkkyystarkastelujen, literally translated from Finnish as “sensory assessments” or “taste examinations,” refer to systematic evaluations of products—most commonly food and beverage items—based on human sensory perception. The practice originated in the early twentieth century as an extension of sensory science, aiming to quantify subjective experiences such as flavor, aroma, texture, and appearance.

A typical herkkyystarkastelu employs a panel of trained or semi-trained assessors who are instructed to identify and rate specific attributes of a sample under controlled conditions. The methodology often incorporates randomized sample presentation, use of a balanced diet, and a standard rating scale (e.g., 0–10 or 0–100) to minimize bias. Statistical analysis, including ANOVA or sensory profile analysis, is then used to interpret the data and distinguish significant differences between samples.

In the food industry, herkkyystarkastelujen are integral to product development, quality control, and consumer preference studies. They help manufacturers ensure product consistency, identify desirable sensory innovations, and verify that new formulations meet target profiles.
