Glutamaattijäännöksestä, known in English as glutamate residue or residual glutamate, refers to the presence of monosodium glutamate (MSG) or other forms of free glutamate in food products. While glutamate is a naturally occurring amino acid found in many foods and plays a role as a neurotransmitter, its addition as a flavor enhancer is common in processed foods. Glutamate residue can arise from the direct addition of MSG or as a consequence of food processing that releases free glutamate from proteins.

Concerns about glutamate residue have been raised by some consumers, often linked to a set of symptoms colloquially referred to as "Chinese Restaurant Syndrome." However, extensive scientific research, including studies by regulatory bodies like the U.S. Food and Drug Administration (FDA) and the European Food Safety Authority (EFSA), has generally concluded that MSG is safe for consumption. These organizations have not established a causal link between MSG consumption and the reported symptoms.

Food labeling regulations vary by country. In some regions, ingredients like MSG must be explicitly listed on product packaging. In others, foods that naturally contain high levels of free glutamate due to processing may not require specific labeling for glutamate content. The presence of glutamate residue is therefore a factor that consumers interested in dietary components may consider when making food choices.
