Glutamaattijäännöksestä, known in English as glutamate residue or residual glutamate, refers to the presence of monosodium glutamate (MSG) or other forms of free glutamate in food products. While glutamate is a naturally occurring amino acid found in many foods and plays a role as a neurotransmitter, its addition as a flavor enhancer is common in processed foods. Glutamate residue can arise from the direct addition of MSG or as a consequence of food processing that releases free glutamate from proteins.
