Emberroasted is a cooking technique in which food is exposed to radiant heat from glowing embers produced by wood or charcoal, rather than to an open flame. The method emphasizes steady, indirect heat and a smoky flavor imparted by the embers themselves and by any wood used to produce them.

Preparation involves building a bed of hot embers and maintaining a stable temperature. Food can be placed on a grate above the embers, set directly on a shallow bed of embers in a pan, or enclosed in a clay or metal vessel to trap heat. Cook times are generally longer than direct grilling, with turning or repositioning needed to promote even cooking and prevent scorching.

Emberroasting is used in various settings, including traditional hearths, pit roasts, and outdoor grills designed to retain embers. It is well suited to larger cuts of meat, root vegetables, fish, and bread, where slow, gradual heat helps render fat and develop exterior color without flare-ups.

In modern cuisine, emberroasting is often associated with low-tech, seasonal cooking as well as advanced barbecue practices. It shares principles with related methods such as pit roasting, coal-fired baking, and hearth cooking, but emphasizes the use of embers as the primary heat source.

Safety considerations include managing ember temperature to avoid ash formation on food, preventing flare-ups, ensuring adequate ventilation, and using protective tools to handle hot embers.
